Celebrating the World Food Day (16 October)
You would hardly find a dining table in homes or restaurants anywhere in the world which does not have salt and pepper shakers. Without salt and pepper the food would be without any taste. These have also acquired a venerable place in our history. ‘Namak Satyagrah’ or Dandi March (1930) was one of the three major movements launched by Gandhiji in India’s freedom struggle. The history of pepper is older than the history of India; there is archaeological evidence of people using pepper in 2000 BC in India. From here it went all over the world through trade from ancient times. Pepper also became a curse, because some European traders in pepper gradually became our rulers for about two centuries.
Yet you would scarcely believe that these commonplace items of daily use would have museums dedicated to them. There is one in Gatlinburg, Tennessee in USA, displaying some 20000 pairs of shakers. This has been overtaken by one in Israel by a passionate collector, Eitan Bar-on, who has converted his home in Hadera into a Salt & Pepper Museum, showing more than 37000 pairs of shakers. His shakers include Santa Claus, Christmas trees, toilet seats, and even Queen Elizabeth and her dog.
Salt and pepper being so central to making any food edible, these have entered the culture of all societies in their idioms and proverbs. ‘Maine aapka namak khaya hai, Sardar’ was the ultimate profession of loyalty. It is another matter that the Sardar had no time for such niceties, and reciprocated with, Le ab goli kha. Another interesting use of ‘namak’ is in the sense of enhancing the vocal quality of a female singer in a flirtatious, playful way. In Kalank (2019), the royal princess Roop (played by Alia Bhatt), trapped in a loveless marriage, goes to Bahar Begum (played by Madhuri Dixit) to learn dance and music. Bahar appraises her thus: आपकी आवाज़ अच्छी है, लेकिन नमक थोड़ा कम है. On a DD Bharati programme about light classical music, the expert, going in raptures about Shobha Gurtu, said that she was exceptional because in her voice Dharwad’s classicism combined with Bombay’s namak. Our Mumbaikar8 once described a song as फीका, “not saltless, but less salt”.
Namak leads to two derivatives denoting exactly opposite character traits: Namak Haram and Namak Halal. Incidentally, Amitabh Bachchan acted in both the films, and both were extremely successful. And not to forget another acclaimed film Namkeen (1982). The ‘salty’ girl in the film (Sharmila Tagore named as ‘Nimki’) was a reserved spinster. However, namkeen has a very different connotation in common usage. If you tell the father of a grown up girl, Masha Allah! Aapki ladki to bahut namkeen hai, you are inviting violence, because it is overtly suggestive and vulgar. But it is one of the quirks of language that if you say the same thing in Sanskirtised Hindi, आपकी कन्या तो बहुत लावण्यमयी है, it is dignified compliment.
There must be something about namak, which lends itself to such varied uses in culture, cinema and literature. Namak Ka Daroga is one of the most famous short stories of Premchand of his idealistic phase.
’Meetha’ (sugar) does not lag far behind. It has a very strong association with joy and happiness. Cadbury had a famous advertising campaign which ended with the tagline, ‘Kuchh meetha ho jaye’ – sounds so simple, but every creative team is in pursuit of such Holy Grail. Hitting such lines is a matter of epiphany. When someone brings you an unexpected good news, you greet him with, Aapke munh mein ghee shakkar. And you share your success or any good news with your friends and office colleagues with laddoos – Munh meetha kar lete hain. And we are all enamoured of singers who are endowed with a sweet voice. Hemant Kumar is one whose Birth Centenary we are celebrating on SOY. But you have to be careful, many people avoid sweets as they have चीनी की बीमारी, or simply, ”मुझे माफ़ करें, मुझे sugar है.” Diabetes is regarded as the mother of all diseases, and unfortunately India is the world capital of this disease, making it the public health challenge no. 1 of our country.
Back to pepper with which I started. Just as you embellish the taste of food with salt and pepper, you would say things Namak mirch lagakar for making it more colourful. Given our attitude to women, they are advised to carry pepper spray in their purse as a protection against roadside Romeos in case they try to act funny. Ketan Mehta made a wonderful film Mirch Masala (1987), in which the women in the pepper factory resorted to mass pepper spraying to save themselves from the lecherous Subedar.
While salt and pepper are integral to food, by themselves they have no value. If you include other food items, the number of idioms in Hindi would go into hundreds: Daal mein kuchh kala hai; Tumhari daal nahi galegi; Ye munh aur masoor ki daal; Aate daal ka bhaav maloom ho jayega; Muflisi mein aata geela; Doodh ka jala mattha bhi phoonk kar peeta hai; Doodh ka karj, you can go on and on. You can trust Bollywood to have songs for everything under the sun. Let us enjoy some songs based on food items to celebrate the World Food Day (to commemorate the founding of the Food and Agricultura Organisation under UNO on 16 October 1945, and wish the FAO all the best on its 75th Anniversary).
1. Noon roti khayenge jingi sang hi bitayenge by Khesari Lal Yadav (Bhojpuri rap, 2018), lyrics Azad Singh Premji, and Pyarelal Kaviji, music Ashish Verma
This Bhojpuri-Hindi wrap has become viral globally. The language and the delivery are whacky, and the declaration is unambiguous:
I would eat salt and roti, but I would spend my life only with her
Somehow we fell in love, and I proclaimed it to her
It spread like wild fire in the village from one ear to another
Panchayats ware held
It also led to thana-FIR
Lathis came out between her family and my family
In spite of all that I would eat noon-roti, but would spend life only with her.
It was the night of Maaghi winter,
We had set up a date for 8pm,
But a blasted dog bit me and blood started oozing from the wound
Yet I was driven to meet her in passion of love
You may shoot me, but I will never forget her,
I would eat noon-roti, but would spend my life only with her
I would jump on the tracks under a train
I would even fight with the judge for court marriage

This has shades of what a Pakistani leader, after 1971 comprehensive defeat, proclaimed, ‘We will eat grass, but give thousand cuts to India’.
Incidentally, the singer is himself named after a coarse pulse, Khesari (खेसारी). Its cultivation had been banned for over fifty years for its suspected toxicity. Now the ban has been lifted. It is a sturdy crop and can grow in very adverse circumstances. I don’t know about this daal, but the song sung by Khesari Lal Yadav is definitely toxic.
2. Ek roz hamari bhi daal galegi by Kishore Kumar from Bandi (1957), lyrics Rajendra Krishna, music Hemant Kumar
This song has figured earlier in two other posts: On Kishore Kumar’s crazy comic songs, and Parody songs (embedded parody). But it is equally superb as a food song. After struggling with haldi, mirchi, atta, batata, and ruing that his Bhaiya is BA, MA pass, Kishore Kumar cheers up that one day his दाल भी गलेगी. Besides the surface meaning, it is used in an idiomatic sense that his fate, too, will turn for the better. You can’t miss the embedded parodies of KL Saigal’s Panchhi kaahe hot udaas, and Ashok Kumar-Devika Rani’s Main ban ki chidiya ban ke ban ban dolun re. And there is an interesting contrast with Khesari Lal Yadav’s song. Kishore Kumar was fed up of eating roti and nimbu ka achar, but Khesari driven by passion for the girl is okay even with roti and noon.
3. Daal roti khao Prabhu ke gun gaao by Kishore Kumar and Lata Mangeshkar from Jwar Bhata (1973), lyrics Rajendra Krishna, music Laxmikant-Pyarelal
When you are not worried about your daily daal-roti, you can afford to be philosophical, and sing Daal roti khao Prabhu ke gun gaao.
4. Zabaan pe laaga re namak ishq ka by Rekha Bharadwaj from Omkara (2006), lyrics Gulzar, music Vishal Bharadwaj
When you see Bipasha Basu in this item number, you know what namkeen exactly means. No wonder, for her ishq too is salty.
5. Hai hai mirche by Sukhwinder Singh and Alka Yagnik from Biwi No.1 (1999), lyrics Sukhvinder Singh, music Anu Malik
The best metaphor to describe the hot dancer, Karishma Kapoor, is ‘mirche’.
6. Main to raste se ja raha tha..Tujhko mirchi lagi to main kya karun by Kuamr Sanu and Alka Yagnik from Coolie No. 1 (1995), lyrics Sameer, music Anand-Milind
It is difficult to translate Mirchi lagna, but we all know its meaning. The street slang fits perfectly to the persona of Govinda. Beside pepper, the song also has other food items such as bhel-puri and ice cream.
7. Atharah baras ki kanwari kali thi..Chane ke khet mein by Purnima from Anjaam (1994), lyrics Sameer, music Anand-Milind
Chana cultivation has become unremunerative, and fresh green chana has become a rarity. This once a modest food item sells at the rate of ₹200kg in a narrow season of a month. Therefore, I find it such a waste that instead of enjoying the chana, the two protagonists while away their time in useless philandering.
8. Dil ne dastarkhan bichhaya daawat-e-ihq hai by Javed Ali and Sunidhi Chauhan from Daawat-e-Ishq (2014), lyrics Kauser-Munir, Sajid-Wajid
Here is a full platter of food as the hero is a chef-cum-restaurateur. His gang croons this song to the lady Pariniti Chopra. In this song love is soaked in sherbet, finally she conveys her qabool by taking a spoon of phirni.
9. Lo kha lo madam khana by Khemchand Prakash and Rekha (?) from Street Singer (1938), lyrics Arzoo Lakhanavi, music RC Boral
All the food songs are necessarily comic, but this one takes the cake. The male dancer-singer of this song is supposed to be Khemchand Prakash, and one site has identified Rekha as the female singer. It is known that Khemchand Prakash was a trained dancer. Yet seeing him dance and sing in a comic video is a delightful experience.
10. Aloo ki bhaji baingan ka bharta boloji bolo kya khaoge by Kishore Kumar and Lata Mangeshkar from Wafa (1972), lyrics Rakjendra Krishna, music Laxmikant-Pyarelal
In a similar vein of breaking the stereotype, Sanjay Khan gives various choices of food to Rakhi who is willing to take whatever he can make. Finally, she realises it is all gas, and the man is not capable of giving her anything.
11. Le lo, Mooliram aur Bhindimal ka nikal gaya hai diwala by Rafi from Dulhan (1958), lyrics SH Bihari, music Ravi
Veganism has become the new fad in many parts of the world. We have been primarily a vegetarian society. This song gives you the best of gaajar, parwal, gobi, tamatar, karela, batata, methi and baigan, sourced from different cities of the country, such as Patna, Banaras, Surat, Dilli, Muradabad, Nadiad, Ahmedabad and Kalkatta. We missed the song in my post on songs on metros/small town, but thanks to Dr Shetty, I am happy to include it in food section where it truly belongs.
12. Vivah bhojanambu by Madhavapeddi Sathyam from Mayabazar (Telugu, 1957), lyrics Pingali Nagendra Rao, music Ghantshala
I have been lucky to come across this song from the bilingual Telugu/Tamil blockbuster, which should be undisputedly the greatest food song. My daughter strongly recommended the film Mahanati (available on Prime Video), a biopic on the life of the Telugu/Tamil actress of yesteryear’s, Savithri. It is difficult to make a film of this genre which can hold the audience interest, but it is an outstanding film. This had a clipping of Vivah bhojanambu from Mayabazaar, and thus it was that I reached this song. Mayabaazar was a mythological film based on an episode from the epic Mahabharata, about Balram’s daughter Shashirekha (played by Savithri), set to marry Arjun’s son Abhimanyu, but Mama Shakuni conspires to get her married to Duryodhan’s son Lakshman. Krishna takes the help of Ghatotkach who, by his magical powers, carries off Shashirekha to safety where she is married to Abhimanyu; Ghatotkach himself returns to the palace and transforms himself into Shashirekha and wreaks havoc at the wedding. It was during this period that he comes across all the feast prepared for the wedding. SV Ranga Rao playing Ghatotkach does a superb job in this fun song of devouring the laddoos, jalebis and all the spread.
I also came to know that this song is inspired from the English song The laughing policeman by Charles Jolley/Charles Penrose, originally recorded in 1922.

A very nice deviation from the normal !! Songs on a Platter !! What do you listen to when you’re cooking , I wonder.!! Yes, there is a tendancy for every one to humm a song as he or she walks up to kitchen already mouth watering for intended end product .

There is a fly in my soup….is the most complaint when it in a high end restaurant . When not satisfied the complaint becomes aggressive…Your waitress was miserable and so was your food !!.
When lacking meal-time inspiration, try turning your ear to music. Classic remains as delectable to the ears as ever. Tea and cana cona coffee has always been my favorite when visiting a reputed restaurant . Hotel Standard located over Cinema Regal used to give a very tasty Biscuit as a complementary with coffee. Juke Box was another attraction. For Four Aanaas one could hear their choicest songs . other hotels around had live music with best of crooners singing in a nice way…….yes swaying with rhythm and slow beats.

Thanks a lot. I am happy you enjoyed it. How nice it would be if every day was the April Fools’ Day, but sometimes we have to act serious. Sometimes Songs Of Bore fit perfectly with the theme.
The first two songs are well known and are perfect food songs. The third Do ghoont chai pee: I have never seen anyone getting so inebriated with chai. I am often in minority of one with my nimbu pani in the parties, when I have to act like them, but that is far short of this.
The fourth song Aao hamaare hotel mein is very joyous, but I am puzzled why Nimmi made a sad face when the song started. Did no one tell her that this was a different kind of scene?

Rookhi sookhi main kha lungi: This is a lovely song, we discussed in the review of songs of 1946. The charm is in the lady taking the initiative, “Paas bula lo more raja”. When the man expresses various difficulties, she proclaims that she will address it, she is even daring to persuade the ‘Daroga’ who was “Gusse ka Hitler”. A nice companion to first song in the post when the man proclaims his determination.
Zindagi hai kya sun meri jaan: Even as icecream thelawala Dev Anand is Dev Anand. It is hard to remember any role in which Dev Anand was not Dev Anand, but the character. I guess we all loved him for that.

I agree with you that some SOBs fit the theme perfectly. I mentioned as there were a lot of them. In the Kundan song Nimmi’s sad face is from the previous scene. This fun song was added, as is normally done in our films, to mitigate the effect of the sad and tense scene earlier.
The mukhda of the song ‘ye ras teri baton ka’ is
Ye ras teri baton ka chocholate,
ye jadoo teri ankhon ka omelette,

So omelette is connected to her eyes. But, this is also a misfit unless he assumes her eyes as eggs. In the antara he compares her eyes with ‘Paris ki galiyan’. This song also highlights the fact that in hindi films, tukbandi is as old as the films itself.

Boot Polish movie and songs are my all time favorite. Seen many times in clips and in repeat modes . What a performance by Rattan Kumar , Naaz and David. Lyrics were great and so was composition ….and above all clear cut sound recording . I think David and Tarudutt won colavary award for best actor and photography respectively.

I missed visiting Museum on salt and pepper . I had my family vacations there in 2012 and was grossed on Dollywood street attending some country music theaters and other attractions like wax museum etc. Gatlinburg, Tennessee is a great place to visit . The street itself is a treat to walk and enjoy mini theaters by the roads. Living in wooden cabins was awesome in smoky mountains….the most visited national park !!

Yes the lockdown situation in big cities was really serious. In our area it was reverse. The vegetable growers who were not able to sell their produce in mandi were selling it cheaper than usual. We were producing most of the vegetables in our farm. But, there were sordid tales too. There was a poultry farm about 1 km from our house. It fell short of rations for the farm and labour ran away. The owner, one day, decided to do away with all his hen. People including children from the surrounding villages – who had no qualms about having them – had field day. We also saw dogs carrying the dead hen.
Even during lockdown people with reach had permits to move freely. One day a 4-wheeler came on our road with onions brought from Alwar Mandi. He was selling them at about Rs. 7/8 per kg. I asked him how he went to Alwar. He told that he took the steel pipes from a factory, the owner of which had organised a permit for him.

Chitragupta is a legend for Bhojpuri film music. Since he took the mainstream playback singers, the Bhojpuri songs acquired mainstream popularity like any film song of the period. The new lot Khesari, Pawan, Nirahua are firing up Bhojpuri music, albeit a bit raunchy. If you treat appearance in Kapil Sharma show as a measure of popularity, they have arrived. Gud ki dali: Depends whether you have a sweet tooth. Many people do not like sweet taste. But I like this song, difficult to choose between Bipasha Basu and Helen.
Meethi meethi baaton se bachna zara: It is a good advisory, err on the safer side, why take chances even with sugary talk. Had people heeded we would have been in a much better situation.

Choona lagana: If you are asking for it’s idiomatic meaning, it means the same thing which you are hinting. These days online choona lagana has become very common. And the kind of people who fall prey and the manner in which someone lagaaoes choona, you hardly feel sympathy for the victims.

The ‘chooran’ song is a great find for me. I had not heard this one. In this the female is selling ‘mooli’. The prices of those days are revealing. One paisa for ‘chooran’ and one paisa for 3 moolis. ‘Chooran’ contains ‘chaar namak chaubees masale’. Both of them are mentioning who likes their things. In the end they agree that both the things are ‘namkeen’. This song was precursor of the Naya Andaz – 1956 song by Shamshad and Kishore where they sold ‘chana jor garam’, ‘moongfali’, ‘gannerian’ and ‘jalebiyan’. This song was posted by Josephji at 13.
In 1962 when I was in 4th class, we used to get this ‘chooran’ in one paisa, the quantity must have been reduced than what they gave in 40s. In those days there were also ‘budhi ke baal’ which were sold at very low rates. There was also a thick gel like thing, which the hawker brought on a pole which also had colourful paper flags on small ’tilis’. He would stick this thing on the flag post which was a ’tili’ give to us. We took it as much for the flag as its taste. Can you remember the name of that gel like thing.

Long back I listened to this song ‘chutney kaise bani’ in a marriage. People were dancing without understanding anything of lyrics. Now I know this is not from a film. There have been all type of songs, from simple food songs to those where the food item has been embedded beautifully in the lyrics. I have not seen the songs from lyricist’s point of view, so I dont know whether there is any song by Bharat Vyas in the already posted songs. I limit myself to Phulauri bin chutney kaise bani. This is a Bhojpuri song. Since it is a traditional folk song, I didn’t give much attention to it except taking it for granted that it must be of great antiquity. Now that you mention it, I searched some more. I remember that it was used in Dabang 2, again not taking much notice of it, except its picturisation and Salman Khan’s dance. There are a number of Bhojpuri links of this song on the YT, and has become the current norm, some quite raunchy. Richard Singer had sometime back posted about ‘Chutney Music‘ on his blog. This is the name given to a unique genre of Indo-Caribbean music, which is a mix of Bhojpuri traditional songs with local music, and is very popular in several Caribbean countries and South Africa. I also find that Phulauri bin chutney is a famous album (1976) of Tirindad-Tobago singer Sundar Popo. He must have used a traditional tune, most likely it was not his original composition. And to add to the mystique, a Bhojpuri film of that name has also been made.
Folk has a way of tying up several knots. The same seems to be the case with this song.
As for its meaning, Mr Google says it means what good is phulauri without chutney. This is literally not correct, but it makes sense. (You are right, phulauri is besan pakori).
Literally ‘bani’ is a form of the verb ‘बनना’, in the sense of you make curd from milk and so on. If you add ‘बिन’ with ‘pulauri’ the sentence would mean, ‘How can you make chutney without pulauri’. if you consider ‘बिन’ with chutney, the song would mean, ‘How can you make phulauri without chutney?’ You can interpret it not as an ingredient, but a necessary accompaniment to go with phulauri. You are not going to make phulauri without making chutney too.

I have to especially thank you for the parody medley song from Laakhon Mein Ek. As I was thinking this is a family medley of father-son duo songs, I was struck by a small portion for Pankaj Mullick’s Chale pawan ki chaal and the tune of Ayi bahaar aaj, ayi bahaar. It is quite common to find parodies of K L Saigal, and often K C Dey too, but Pankaj Mullick is quite rare. The only other instance I have found is Sundar naari preetam pyari in Kishore Kumar’s Gunijanon re bhaktajanon.

Thanks for the additional information. The Marathi movie has the original voices of Jagirdar and David, the two main characters of the film. In the Hindi version on youtube the voices are different. There is one more question. HFGK mentions the MDs as Vasant Pawar and Ram Wadhavkar, while in the titles the names given are Vasant Pawar and Ram Washikar. Did this second composer use both the surnames Wadhavkar and Washikar.

The song @ 198 ‘dekho dekho gadbad ghotala, dal men hai kuchh kala’ was a big hit from CR’s film Sangram, 1950. The song @ 197 is just a parody song. The lyrics have even been changed to ‘dekho dekho gadbad ghotila’ to match with ‘daal men hai peela’. If you listen to the full song, you will find that the famous Shamshad song ‘tamtam se jhanko na rani ji’ has also been parodied as below:

Looks like Ram Wadhavkar used the surname Washikar only for Mahatma 1953.
For another Hindi – Marathi movie titled Chimni Pakhre/Nanhe Munne made in 1952 as well as Marathi movie Aboli 1953, he used the surname Wadhavkar.
For Hindi movies such as Suhaagan, Kalaakaar, Saavdhan all made in 1954, he and Vasant Pawar composed music under the name Vasant – Ramchandra.
Interestingly, all these movies were produced by Datta Dharmadhikari.

Great connect with the Saajan song. The style of song used in ‘resham ki dori’ is from panjabi folk ‘boliyan’ where song is continued by using similarly rhyming words. In old times, people in Panjab used to sit and create on the spot songs using the same words which the starting person used, like the antakhshari game. It is strange that on october 16th we celebrate world food day and next very day on 17th october we observe world poverty day !! Of course year theme for celebrations or observations changes ; but fact remains that 20,000 dies each day because of hunger. Debates are un ending . Still everyone try their best …and that is a positive note irrespective of they having succeeded or not.
Tears streaming down the poor eyes is really a sight that pains me. When you lose some thing you can not replace . Letting it not go waste tears tastes salty….and may those salted fragments ignite their bones for a little strenghth .
Next to poors are the Orphans that are left to shape their own destiny. What could be the worse when one is handicapped too. They need the love utmost and kind. What is their worth no body knows . A little love and extending helping hand is what they want.
Once upon a time I was listening to X Mas songs for the poor during December 82 over night time AIR programme that was dedicated to poor child . Amongst the several songs , the two that touched my heart were…..1. Smash your bottles on the grave yard …and 2. I am no body’s child . That had great impact on me and their after we in our family always saved 10 percent of our earning for the poors and are still maintaining the accounts for the beterment of poors. Teaching poor children itself gives us lots of bliss and blessings .

The pandemic has created an unprecedented dilemma for the poor. It has to be full unlockdown to enable them to earn their daily bread. But now we are at the community transmission stage which is most deadly. Anyone of us could be a carrier and anyone can be infected. Earlier the debate was between life versus livelihood. Are we now at a stage when you are damned if you do it, and you are damned if you don’t do it? And the poor are the most vulnerable. Some of us are privileged to be able to live in comfort while remaining confined.
It was heartening to read your comments which showed an empathetic heart for the poor and you are contributing from your side for their welfare.

I entirely agree to your comments. In this situation even the helping hands are helpless. Still helping other people can be cure….not just for those who needs …..but for curing our own souls too. Sitting on my dinning chair my eyes were focused on salt and pepper , appreciating the designs of the small containers , I was constantly getting distracted by the aromas from the kitchen that filled the room with melting butter, grilled vegetables and sharp spices. All of them together were better than any of the restaurant smells . Immediately I switched off the chimney and started enjoying the thick smoke fully embracing me with warm arms.
How the farmers have put in their so hard work …..giving their dividends to us ….to enjoy our platter. I salute all those working in Agriculture and irrigation sectors who planned future for all of us to stay happy and not hungry.
I salute all those who ….with their tiny shops do good work ….so that their small kitchen are not deprived of Bread and butter.
